Hello I am Casey Kolb the Sous Chef at Creekside Golf Club. I have been in the industry for 14 years now and I have worked in Salem for all of the 14 years. I have worked at Sizzler where I got my start as a dishwasher and worked my way up to Assistant Manager. I left there after 4 years to go to McGraths fish house. I spent almost 5 years with McGraths, If you have ever had the Fishermans Stew that was my recipe I developed for a menu contest between kitchen managers and it was selected to be the soup for all McGraths to have along side the Clam Chowder. They now have 7 stores and opening another one this year. I came to Creekside when we opened the Club house, it was a very exciting time for me and the rest of the staff we were doing somthing different and we all were looking forward to this style of resturant. Over the last 3 years I have been the Sous Chef. My Food Likes are all over the place Asian, Mexican, Italian, German. But I do like the American Favorites Steak and Potatoes. I like experementing with food its great when it works out but sometimes it doesn't. At Creekside I found the true meaning of fine food is art. Eye appeal is the first thing you have to win the guest. If it tastes great good but if it looks like junk people will not even look past it and it will be terrible. Plate presentation is the Key. At McGraths the rule was no food was to be stacked or touching one another. That makes for larger plates and smaller portions. We see height as a good thing and larger food portions keep the guest happy and coming back. I hope to include some pictures of our menu items soon! In the first week of January I was named to the Chef position at Creekside this will be a great new challenge for me and I hope the team in the kitchen is ready for the new leadership. This last summer I entered the Oregon Wine Awards. This year they had a compatition between the chefs. the Idea was to get better food for the spectators who are tasting wine. I helped set up the plan for a compatition between the chefs so a higher caliber of food would become available. It worked from cheese and small bite size sandwiches in 1998 to oysters, emu potstikers, salmon cakes, lobster ragu, to very nice chocolate desserts. We entered two items, our goal was to walk out with peoples choice white wine and red wine awards. I think it hurt us having two items on one table we only had one set of ballot boxes so if you like our Lobster Ragu with white or red it would also count if you liked our Chicken Maderia. We won the Peoples Choice for Red Wine our Chicken Maderia was a hit. The guys in the kitchen worked very hard and a little error on counting and we ended up with 1700 little puff pastries rather than 1400. but I think the award was worth it. We also had a booth at the First Annual Chefs Night Out in Salem. we hope to have the chance again this year, it went to a great cause and the chefs love to show off. The Oregon Wine and Food show came calling this year and they wanted me to be involved in a presentation. I have never done anything like this before, the presentation part that is. I have helped behind the scenes many times, but to get up in front of lots of people on a stage, it was hard for me to accept the award in front of 750 people at he Wine Awards and I was a little tipsy form all the samples I had. I went ahead and did the show, doing the Beef Mostaccoili a former menu item. The people loved it I made Beef, Chicken, Seafood, and Vegetarian. it was a hit. I have recieved my 15 min. of fame this week and more. Two times I have been in the paper this last week, Also a radio interview and a chef profile to come later this next week in the paper. I am not accustome to fame so this is a shock to me. But I like it. We hope to continue doing these shows it helps bring new customers to Creekside and potential members see who we are and what we do. Also we meet other Chefs and see what they do and get great new ideas!!! One of my Hobbies is web page building and this is another one that I have built.
